Blueberry Sour Cream Muffins

Ingredients

Muffins:

  • 1 package Shawnee Mills Blueberry Muffin Mix
  • 1 egg
  • 2 1/2 Tbsp. milk
  • 1/4 cup sour cream

    Streusal Topping:

  • 1 Tbsp. sugar
  • 1 Tbsp. brown sugar
  • 1 Tbsp. Shawnee's Best All-Purpose Flour
  • 1/4 tsp. cinnamon
  • 1 Tbsp. butter or margarine
  • 3 Tbsp. finely chopped pecans
  • Directions

    Preheat oven to 400 degrees F.
    Combine first five streusel-topping ingredients and mix until crumbly. Stir in pecans and set topping aside. Mix together egg, milk and sour cream. Add muffin mix and stir until just blended. Spoon batter into greased or paper lined muffin pan. Sprinkle batter with streusel topping and press lightly to adhere. Bake 15-18 minutes or until golden brown.
    Yield 6 muffins.

    Alternate Topping Recipe:
    2 Tbsp. Brown sugar
    1/4 tsp. Cinnamon
    3 Tbsp. finely chopped pecans
